  • 300g, cubed soft tofu
  • 150g minced chicken
  • 3 cloves garlic
  • 1 thumb ginger
  • 1 tbsp light soy sauce
  • 1 tsp cornstarch
  • 1 stalk spring onion
  • 2 bowls, cooked rice
  • 1.5 tbsp chilli bean paste (doubanjiang) buy

    Fry mincedMince.Cut very finely (releases stronger flavour, but burns faster).Glossary → chicken in oil until it loses its pink, 3 min. Add garlic and ginger, 30 sec.

    Stir in the chilli bean paste and soy until fragrant and red, 1 min, then add 150ml water.

Storage & leftovers

Cooked rice needs care: cool it quickly (within an hour), refrigerate in a covered container, and eat within a day — reheating it until piping hot all the way through. Don’t leave cooked rice at room temperature.
