How to turn instant noodles into a real meal
A packet of instant noodles is a base, not a finished meal. With about five extra minutes and whatever’s in the fridge, you can turn it into something you’d actually be happy to eat for dinner. The formula is always the same: add a protein, add a vegetable, add a fat, and fix it up at the end.
The four upgrades
- A protein. An egg is the easiest — crack it into the broth for the last minute, or fry it and lay it on top. Leftover chicken, a handful of tofu, or a tin of tuna all work.
- A vegetable. Anything green and quick: a handful of spinach, some sliced cabbage, bok choy, or frozen peas, dropped in for the last two minutes.
- A fat. A teaspoon of sesame oil or a knob of butter stirred in at the end makes the broth taste rich instead of thin.
- A finish. Spring onion, a few drops of chilli oil, a squeeze of lime, or a spoon of the sauces from your pantry shelf.
Dry vs soupy
Soupy: use most of the seasoning packet, add your protein and veg to the broth, and finish with sesame oil. Five minutes, one pot.
Dry (goreng-style): this is where instant noodles get genuinely good. Boil the noodles, drain, then toss them in a pan with the seasoning, a little oil, an egg and some vegetables. One rule that matters
Don’t overcook the noodles. Pull them a minute early — they keep softening in the hot broth or pan. Mushy noodles are the one thing you can’t fix.
